For wild pigs
Apples – with sage, go really well in any cooking
method for pork.
Apricots – whole fresh apricots cut up, or apricot
sauce, give a flavour that works well with pork.
Fennel seeds – have an aniseed type of flavour that is a
great little addition to a stuffing mix.
Garlic – with paprika, a favourite of mine for the
Sunday roast.
Ginger – a root spice, so it can be added to a slow
cooking casserole, and makes a great rub for a roast.
Ground ginger is often used in making small goods.

Darran’s controversial venison back steak recipe
This recipe is great for strong flavoured stags, as it alters the flavour of the meat surprisingly well.
Ingredients
Rutted back steaks
One can cola
A sprinkle of Mexican chilli powder
Layer the steaks in a glass bowl. Sprinkle over the Mexican chilli powder.
Method
Pour in cola, totally covering all the meat. Leave to stand in the fridge for two hours. Cook steak as normal. A fantastic taste sensation! |
